Enjoy a Kidney-Friendly Summer Meal

Summer Succotash

Time Needed: 30 minutes.

Summer Succotash is filled with the nutrition you need while being tailored to people with kidney problems. That means this kidney-friendly recipe is low potassium, low sodium, and customizable!

Give this delicious & kidney-friendly succotash dish a try this summer!

You'll need:

  • Enough Avocado Oil to coat pan
  • ½ White Onion, diced
  • 1 cup Frozen Corn
  • 1 cup Frozen Edamame
  • 1 Zucchini, quartered
  • 1 Summer Squash, quartered
  • 1 Tbsp Minced Garlic
  • Sprinkle of Black Pepper
  • Sprinkle of Cumin
  • Cayenne Pepper (very hot – add to personal preference)
  • ¼ tsp Salt

Directions:

  • Heat skillet (cast-iron skillet preferred)
  • Add enough avocado oil to coat skillet
  • Add Onions and cook down for a few minutes
  • Add frozen corn and edamame
  • Cook on high heat, with minimal stirring until corn and edamame is slightly charred or browned
  • Add zucchini and summer squash
  • Cook on lower heat, stirring occasionally until done
  • Serve over a bed of rice or salad greens

Tropical Chia Seed Pudding

Time Needed: 30 minutes.

This Chia Seed Pudding is not only tasty and fun to customize, but it’s also healthy, especially for those with a low or no sugar diet!

If your sweet tooth has ever gotten you in trouble with your renal dietitian or nephrologist, be sure to give this dessert a try!

You'll need:

  • Mason Jars or similar dessert container
  • ¼ cup Chia Seeds
  • 1 cup Unsweetened Almond Milk
  • Almond Milk is the best option here, but you should be able to use whatever milk you have on hand.

Customize with:

  • Mango

  • Frozen Berries

  • Coconut Shaving

  • Sliced Almond

Sweetener Options:

  • Cinnamon

  • Vanilla Extract
    Liquid Truvia

  • Cocoa Powder

Directions:

  • Mix milk and chia seeds in a bowl, cover and refrigerate for at least 2 hours.
    Try blending the milk with a ½ cup of mango or berries first to make a purée. Have fun customizing and trying different flavors!
  • Pour mixture into containers, filling each jar about halfway. Add mango, berries, or other fruit and then fill the rest of the way with pudding mixture.
  • Garnish top with almonds or coconut shavings and serve.
